2. Saute the shallots, garlic, celery, zucchini, and carrots until softened
3. Add the Kale, Mustard Greens, salt, black pepper, thyme, rosemary, bay leaves, vetetable broth and tomatoes
4. Reuce heat and simmer for 15 minutes with lid slightly ajar
5. Add the soya milk, white miso paste, and watercress and cook for a further 5 minutes, stirring periodically
