We have this dinner salad almost every night. Even our 2 year old loves this salad and it's so simple and easy to make.
This salad is great, is your basic ever night of the week salad. On Sunday night I boil the eggs, core out, wash/dry and peel as needed and put everything in it's own ziploc bag or container. After a busy day at work or running around doing whatever you do, just pull the bags out, grab a paper towel for another quick pat dry as needed and start chopping.
I like this salad with the lettuce hand torn. I like the peppers to be cut about 1" square, the carrot chips you can get pre-bagged if you want to save yourself some time and hassle. If not, chop your carrots 1/4" thick on the diagonal. I also prefer the cucumbers left with their skin on and cut about 1/2" thick. Since the cucumber has so much water content, If you cut them too thin you really don't taste them because the skin and thickness give them the flavor.
This salad is great to have on hand. Add left over steak, rotisserie chicken or shrimp, Avacado, black beans and Pico de Gallo in a Tortilla Bowl and make this simple salad with on hand ingredients into a fast and very healthy meal! This is ALWAYS on hand in our house.
Leave off the Cheese and Bacon bits for a healthier variety.

Tip 1 - Don't chop peppers and cucumbers too small. Tip 2 - Hand Tear or cross cut the lettuce so the pieces aren't too big
