Goes great with the Crock Pot Mexican Ribs
1 Peel and segment citrus and place in a bowl.
2 Peel jicama with a carrot peeler, then slice into circles
and then into match-sticks. Add to the bowl with the
citrus.
3 Squeeze 1T lime juice into bowl.
4 Add cilantro and season with chili powder if desired.
Toss and serve.
