A super quick, super delicious way to have enchiladas.
Heat oven to broil.
Combine first 9 ingredients in medium saucepan; stir with a whisk. Bring to boil over high; cook 2 minutes until thickened. Reserve 1 1/2 cup sauce mixture. Add chicken to pan and cook additional 2 minutes until heated.
Spoon about 1/3 cup chicken mixture onto each tortilla; roll up. Arrange, seam side down on 13x9 baking dish coated with spray. Top with reserved sauce & cheese.
Broil for 3 minutes until cheese is browned lightly.
Serve with sour cream if desired.
