Super easy recipe so common in steakhouses. This is delicious
Preheat oven to 425. Coat a 2 quart dish with nonstick spray.
Saute onion in skillet in 1 tbsp of butter until softened, about 5 minutes.
Add flour, stir to coat onion. Cook about 1 minute. Gradually whisk in milk and heavy cream, stirring constantly. Simmer for 1 minute. Stir in garlic & herb cheese a little at a time, until all is melted and sauce is smooth. Remove from heat.
Add spinach, parmesan and seasonings. Transfer to baking dish.
Combine bread crumbs, melted butter and olive oil. Top spinach and press into mixture.
Bake 20-25 minutes.
