Heat olive oil in skillet
Chop onions, garlic, and ginger and sautee in oil
Add salt and pepper and simmer
Drain and rinse chickpeas
Add Curry powder to sautee mixture and sautee
Add drained chickpeas and let simmer for several minutes until they get crispy
Add coconut milk and chicken broth
Add a little red pepper flake
Let it simmer and thicken for several minutes
Stir in fresh spinach and let cook/wilt for 1-2 minutes
Add shredded chicken
Serve over brown rice
Top with sour cream/greek yogurt, lime juice, cilantro, olive oil to taste
