Kare Kare is a traditional Filipino stew complimented with a thick savory peanut sauce and shrimp paste (on the side).
> Boil beef & oxtails in enough water with salt and peppercorns. Simmer for 1 1/2 hours or until tender.
> Saute garlic & onions in oil (and atsuete oil, if using). Add a little bagoong. Add cooked meat & 2 cups of the broth. Add salt (& atsuete powder, if using). Simmer for 15 minutes.
> Stir in peanut butter (& toasted rice powder, if using). Bring back to simmer and cook, stirring, for 5 minutes.
> Add veggies. Cook 10 minutes or until tender, stirring occasionally. Correct seasonings.
> Serve hot with bagoong (and rice).
> Enjoy!
* Tripe or pork leg can be substituted for oxtail.
