Suggest a better descriptionCombine all the ingredients for marinade. Pour over pork in a plastic bag. Set in dish and put in refrigerator to marinate for at least 45 minutes. NOTE: Can marinate up to 2 hours.
Preheat grill, heating one side to Med-high and the other side to med-low.
Grill tenderloins, covered, over med-high heat until an instant-read thermometer inserted into the centers registers 150 degrees. Approx.
12-15 mins.
Meanwhile, top tortillas with 2T of bean mixture and top with cheese ready to be grilled after tenderloins are finished
Remove tenderloins frm grill and tent with foil. Let rest while heating tortillas
Put tortillas on the med-low side of grill and cook covered until the cheese melts - Approx 1-2 mins. They will become crispy around
edge...important to take off while they are still pliable enough to fold.
Cut tenderloins into thick slices. Top each tortilla with sliced pork; serve with various salsas....
I like to use the Mango Salsa from Costco. Frontera's "New Mexico Chili Salsa" is also great.
