Soak skewers in water for about an hour to prevent them scorching.
Cut lamb into 3 cm pieces, thread onto skewers, about 12.
Heat oil in medium saucepan; cook lemon grass and cumin, stirring until fragrant. Add remaining ingredients, bring to the boil, stirring; simmer uncovered, 5 minutes.
Cook skewers in batches in heated oiled grill pan or on BBQ, until browned all over and cook as desired; serve skewers with satay sauce.
Garnish with coriander and serve with warmed rice.
Cook meat to medium.
