Easy, juicy, and a big hit with my gang!
Butterfly chicken breasts. Place between 2 sheets of plastic wrap and pound thin with smooth side of meat mallet. Combine remaining ingredients in large zipper-style bag. Add chicken. Marinate in refrigerator for at least 30 minutes.
Heat grill pan over med-high heat. Spray w/ non-stick cooking spray. Grill chicken breasts 3-4 min on each side or until done.
I like to reserve a bit of the marinade (or make an extra batch) to serve w/ the chicken. Chop up a couple of fresh, ripe tomatoes and get the ready-to-cook flour torillas from HEB. Cook some tortillas, place sliced chicken and tomato into warm tortillas. Drizzle with reserved marinade. Enjoy!
*If using regular soy sauce, use less than 3 tablespoons or it will be very salty.
