(1) In a dutch oven, and in portions fry beef and pork until browned. Set aside in a large mixing bowl.
(2) Caramelize onion and garlic.
(3) Deglaze pan with red wine, let sit.
(4) Mix together meats, onion, garlic, oregano, salt and pepper, spinach, strained tomatoes.
(5) Starting with meat, layer; meat, noodles, cheese into the dutch oven.
(6) Place in oven for at least an hour.
Make the last layer without pasta, as top layer of pasta will dry out.
