Mom's best
Part 1:
Remove sausage meat from outer casings. Chop the meat. In a large dutch oven pot, over medium heat, sauté sausage, beef, onion and garlic, stirring frequently until well browned, approximately 20 minutes. Add sugar, 1 tablespoon salt, the basil, fennel seeds, pepper and 1/4 cup of the parsley, mix well. Add tomatoes, tomato paste, mashing tomatoes with a wooden spoon. Bring to a boil, reduce heat, simmer, covered, stirring occasionally for 1 - 4 hours.
Part 2:
In medium bowl, beat egg, and add ricotta, 1/4 cup parsley and 1 tsp salt. Mix well
Part 3:
In a 13x9x2 inch baking dish, spoon in 1 1/2 cups of sauce. Layer with 6 lasagne noodles, overlapping to cover. Spread with half of ricotta mixture, top with a third of the mozzarella cheese. Add with 1 1/2 cups of sauce over the mozzarella cheese and sprinkle with 1/4 cup parmesan cheese. Layer with 6 lasagne noodles, second half of ricotta mixture, the second third of mozzarella cheese, 1 1/2 cup of sauce, and sprinkle with 1/4 cup parmesean cheese. Spread with remaining sauce, top with rest of mozzarella and Parmesan cheese. Cover with foil. (Refrigerate if needed to bake a later time)
Part 4:
Preheat oven to 375 degrees F. Bake Lasagne for 25 minutes, remove foil, bake uncovered for 25 more minutes or until golden and bubbly. Cool for 15 - 20 minutes prior to serving.
To serve, cut reasonable size pieces using a sharp knife and serve with a wide spatula - it is a wonderful gooey lasagne. Leftovers are almost better than the first time.
