Suggest a better description1. Place a rack in top-third of oven (use convection bake-setting if available).
2. Preheat oven to 450°F.
3. Coat inside of baking dish with a thin layer of olive oil.
4. Add the following to mixing bowl and mix throughly with rubber spatula:
• ½ teaspoon minced garlic
• ½ teaspoon red pepper flakes
• 3 turns cracked black pepper
• 2 teaspoons Herbes de Provence
• 1 teaspoon soy sauce
• 1 tablespoon olive oil
5. Trim excess fat etc. from chicken breasts.
6. Holding each chicken breast over mixing bowl, use spatula to coat each in marinade, then drop both in bowl and throughly coat with remaining marinade.
7. Coat each side of chicken breasts with multiple turns of cracked salt and cracked black pepper and place in baking dish.
8. Add 3 tablespoons olive oil and 4 teaspoons minced garlic to mixing bowl and mix.
9. Pour marinade over chicken breasts and spread evenly with spatula, then lift chicken breasts up and tilt baking dish allowing excess marinade oil to run underneath each.
10. Place in oven and cook for 40 minutes.
SERVE
1. Remove chicken breasts from oven, plate each, spoon remaining marinade oil from baking dish over the top of each, and pay special attention to the marinade oil that contains soy sauce.
2. Pinch a little Herbes de Provence mixture over plates for aroma and color.
3. Enjoy!
