This is a light and refreshing dressing for Caesar salad
Wash thoroughly and cut up lettuce. Wash lettuce using 3 gallons water, 1 tbsp. salt, 1/4 c white vinegar. Let sit for 5 min.
Rinse thoroughly. And Dry lettuce well
To make Dressing:
In bowl using whisk, blend all remaining ingredients (lemon zest, juice, mustard, vinegar, salt, pepper, garlic) except oil and sour cream.
Add sour cream, whisking until smooth.
Gradually add oil, whisking constantly (to emulsify),
combine salad ingredients
.
Just before serving Toss in croutons and cheese.
