sweat onion in little olive oil till soft. Add spinach, heat cover and very gently simmer till soft, about 10 min. Season. Whisk together yogurt, garlic and mint. Fry bread in a little oil till golden. Put half croutons in bowl, add cooked spinach, then yogurt dressing. Top with remaining croutons and garnish with pine nuts.
