Cook the pasta according to instructions.
Heat olive oil and butter in a pan, then add leeks and cook until softened (around 5 minutes).
Add the white wine, sage and lemon and cook for another 5 mins or so until the wine has reduced.
Add the chorizo and cook for another 5 mins or so.
Add the cream and cream cheese and cook until combined.
