Suggest a better descriptionPreheat oven to 325 degrees. Butter a deep 8 inch cake pan, line with parchment and butter again.
Using food process and with machine running drop pieces of peel and process as fine as possible. Add half the sugar and leave machine running. Add remaining sugar and scrape down sides of bowl. Cut cheese into 1 inch cubes and add most to the sugar. Process until smooth and then leaving machine running add the rest of the cubes. Beat until completely smooth.
Add lemon juice and vanilla and process quickly. Add eggs and blend in as fast as possible.
Pour batter into pan and bake in water bath for 50-60 minutes or until centre appears firm. Top should not really brown.
Cool until bottom of pan is cool to the touch and invert onto platter that has been dusted with icing sugar.
Dust top with icing sugar and top with fresh fruit.
