Lemon rice as accompaniment to Indian main dishes
1. Heat the oil over a medium heat
2. Fry cashew nuts until golden
3. Remove cashew nuts from pan
4. Add mustard seeds. When seeds start to pop turn heat to low and cover until popping subsides
5. Add curry leaves, red chilies and Bengal gram.
6. Sauté until the Bengal gram turns golden
7. Now add asafoetida powder and turmeric powder and remove from heat
9. Fold mixture in the boiled rice, add the lemon juice, salt to taste and fried cashews
10. Garnish with coriander leaves
