Moist, lemony, delicious sponge
1. Cream sugar, butter and zest on a medium to high speed
2. Add eggs, two at a time, beating well between each addition
3. Mix in flour and lemon juice, alternating between each
4. Put batter into 4 9" tins and spread evenly
5. Bake them at 170C for 22 minutes (may vary per oven so be sure to check)
6. Allow to cool before icing
Be sure to scrape the bottom of the bowl to achieve an even mix
