Cut the onion and mince or press the garlic. Add to sausage and brown in a separate medium saucepan.
Rise the lentils and begin preparing the other vegetables.
When the sausage is browned, add the remaining water, lentils, and spices. Bring to a boil and simmer for 12 minutes.
Meanwhile, prepare the 1 1/2 cups of vegetables and chop the cilantro.
After 12 minutes are up, add the remaining vegetables and simmer for 10 more minutes or until the vegetables are tender.
