Variation of Ina Garten. This has been a hit at many parties. . .bring it in a large crock pot!
Cover lentils in boiling water for 15 minutes then drain. In a large stockpot, heat olive oil, onions, leeks, garlic, salt, pepper, thyme and cumin for 20 minutes or until tender. Add celery and carrots and cook for 10 more minutes. Add chicken stock, tomato paste, red pepper flakes and cheese rind and simmer for 1 hour. Finally, add spinach if desired, red wine vinegar and add the sausage.
If the sausage is already cooked, you can add at the very end and heat through. If you are using a fresh sausage, add to the last 15 minutes of the hour cooking time to ensure it is cooked through.
