In a medium-size pot, saute onion in the olive oil for about 5 minutes, until soft. Cut the potato into 1inch cubes. Add all of the other ingredients. Cover and simmer for 30 to 35 minutes. What could be easier? Serve with a splash of Tabasco or lemon juice if you desire.
