A quick, flavorful soup with lentils, potatoes, carrots and bacon
In a large stockpot, heat the olive oil over medium heat. Dice the bacon and add it, cook a few minutes, stirring occasionally. Dice the onion and add it. Mince the garlic and add it. Add the chicken broth and wine and bring to a simmer. Dice the carrots and potatoes and add them, along with the lentils and herbs. Simmer 30 minutes.
