I recently orderd and enjoyed some chicken tortilla soup at La Fiesta in Mountain View.... it was the best ever. I scoured the net for a recipe that would come close. I think I created something pretty close to it by combining some concepts from various recipes including a recipe I have for tacos. Tried it with turkey since that is what I had left over after Thanksgiving .... can't wait to try it with traditional chicken
1. In large saucepan, over medium heat, saute onion in oil 3 to 4 minutes or until translucent.
2. Stir in chilies, herbs and seasonings; cook 1 minute.
3. Add tomatoes, mix in.
4. Stir in broth and bring to a boil.
5. Add corn and turkey, reduce heat to low and simmer 5 minutes to 10 minutes
To serve, spoon into soup bowls. Top each serving with 1/2 ounce tortilla pieces, avocado slices and 1 tablespoon cheese and the cilantro.
