Creamy loaded baked potato in a bowl. Very nice on a cold day.
Wash, peel, and cube potatoes. Add to pot with water and chicken stock and bring to boil. While potatoes are cooking, cut up onion and cook with bacon. Once potatoes are cooked add milk, butter, sour cream, and bacon onion mixture. Stir together with cheese and simmer until soup reduces to desired consistency, stirring every few minutes.
I use four cups of water and two packets of chicken stock. Also cornstarch can thicken the soup if it doesn't thicken fast enough.
