Suggest a better descriptionPreheat oven to 200c. Pierce the potatoes all over and bake for 50-60 minutes until tender. Cool for 10 minutes.
Heat 10g butter in a saucepan over medium heat. Add the salad onions and gently fry for 1 minute. Add the spinach and fry for 2-3 minutes more until wilted. Tip into a bowl and set aside.
Warm the milk and remaining butter over medium heat until a slow simmer, take off heat.
Halve the potatoes and scoop the insides into a pan, leaving the skin intact.
Mash the potatoes until smooth, then stir in 50g of the cheese plus all the spinach mix. Fold through the smoked salmon.
Increase the oven temp to 220c. Place the skins on a baking tray and fill with the mash mix. Scatter over the remaining cheese and bake for 10 minutes.
