Suggest a better description• In stock pot, sauté fennel, garlic, carrots, shallots, caulilini and tomato
• When vegetables start to take on color, add tomato paste
• Deglaze with white wine, sherry and brandy
• Put bay leaves and thyme sprigs in a sachet for easy removal later
• Add along with spices and lobster stock
• Simmer for 30 minutes
• Remove herb sachet
• Blend in batches in Vitamix until very smooth
• Stir in heavy cream, lemon juice and vanilla bean paste
• Season to taste
• Cool and reserve for service
