Give in to temptation for cheesy, hot pizza with this lightened up version featuring plump cherry tomatoes, savory mushrooms, and a fresh, crisp salad on top.

Preheat the oven to 450 degrees.
Line a baking sheet with parchment paper and brush it with flour.
Shred the zucchini into a clean kitchen towel or cloth using a box grater. Grabbing the sides of the towel or cloth, squeeze out all excess liquid over the sink and transfer zucchini to a large bowl. Add the 2 eggs, along with flour, oregano, garlic powder, salt and pepper to the bowl. Mix well until it begins to form a dough-like texture.
Note: If the mixture is too wet, you can add a tablespoon or two of additional flour to firm it up.
Once the texture has formed, transfer the dough to the baking sheet and form it into ~10-inch round. Spray the crust with cooking spray and bake for approximately 15 minutes on the lower rack, or until the edges appear browned and the crust is firm.
Pro tip: After crust is done baking, remove from oven and allow to rest before adding toppings.
Let rest for 3-5 minutes and then scatter the tomatoes, baby bella mushrooms, and mozzarella evenly and bake for 7-10 additional minutes, or until cheese is melted. While baking, toss together the arugula, olive oil, red pepper flakes, basil, parmesan, and salt & pepper. Top the finished pizza with arugula salad.
