Based on Paleo and food sensitivity diets
cut and puree peaches add vanilla extract add crushed macadamia nuts if needs thickened, keep refrigerated until needed
crush macadamia nuts in blender or food processor, mix equal portion of flour and crushed nuts
prepare and egg bath for the cod, then dip cod into egg, and dip cod in egg then flour mix
pan fry each side of the cod 2-3 mins until golden
chop acorn squash into 1" cubes, cut leek into small rounds
oil a foil lined sheet tray with coconut oil place acorn squash on then sprinkle leek, mix well sprinkle salt and pepper.
bake covered @400 for 15 mins or in the same pan constantly stirring for 10 mins. either way, add spinach last 2 mins, keep covered.
add sp where needed.
