If you are tired of just plain macaroni and cheese, then try this recipe.
Cook macaroni and cheese according to package directions. Meanwhile in a separate
pan, cook the bacon with the onions and bell peppers, until the bacon is crisp, and the
vegetables are tender. Drain the Macaroni and transfer into a large bowl. Stir in the
bacon mixtures with the drippings and mix thoroughly. Add the cheddar cheese, the
chicken, and the tomatoes, and blend until all the ingredients are incorporated.
Transfer to baking pan and sprinkle the remaining cheese on top. Place in oven and
bake at 350 F. until the cheese is melted and the mixture is bubbly. Let stand 5 minutes
before serving.
