Too Cook Lobsters
Put them in a large pot of boiling salted water and cook until they reach an internal temperature of 140 degrees on an instant-read thermometer
Stew
1. Remove lobster meat from shells over a large bowl. Reserve all juices and shells
2. Cut meat in chunks (3/4"-1"). Place in covered container and refrigerate
3. Melt 1 stick butter in large heavy-bottom pot or dutch oven over medium-high heat
4. Add lobster shells and juices to pot and cook for 3 minutes. Toss the shells to coat them with butter
5. Add dry sherry and bring to boil. Simmer for 6 minutes
6. Add milk, cream, paprika, saffron, 2 teaspoons salt, 1 teaspoon pepper
7. Bring to a boil, reduce heat, simmer uncovered for 15 minutes
8. Set aside to cool for 30 minutes
9. Cover and refrigerate for 12-24 hours to allow flavors to blend
10. With pot still covered, heat milk and lobster shells over medium heat until liquid simmers
11. Strain and set aside, discarding shells
12. Place pot on stove
13. Add 1 stick butter and heat until butter melts
14. Off the heat, add lobster, tarragon, 1 teaspoon salt, 1/2 teaspoon pepper and allow to sit for 3 minutes
15. Add cream sherry and tomatoes. Allow to sit for 5 minutes
16. Add strained milk mixture plus 1 teaspoon salt. Bring to boil
17. Lower heat and simmer for 5 minutes
18. Serve in bowls, sprinkling paprika and chives
