Mom's BBQ brisket recipe

Preheat oven to 250°. Wipe the brisket down with a wet paper towel. Then rub the brisket rub onto all sides of the meat. Heat the vegetable oil on medium high heat in an oven safe sauté pan. When the oil is hot, brown the meat on all sides. If you can do this in a pan that you can then stick in the oven that’s ideal. Otherwise, transfer the browned meat from your sauté pan into an oven-safe dish and then use a little water to unstick all the dripping left in the sauté pan and pour them into the baking dish also. Add the beer to the baking dish. Seal the dish well with foil, and bake for 5-6 hours (until it’s falling apart – not so long for smaller pieces of meat).
Let the meat cool completely and refrigerate until the fat rises to the top and you can remove it. Then remove the meat from the pan and cut all of the fat off. Then cut it against the grain in ¼ inch slices. Add the BBQ sauce to the drippings in the pan and mix, then carefully slide a spatula under the slices and replace them in the pan with the drippings and BBQ sauce. Baste the meat with the liquid surrounding it. If you wanted to prepare this dish in advance, you could freeze it at this point.
Heat the oven to 300°. Reseal the pan with foil and bake until you start smelling it (about 2 hrs).
Mom says that brisket recipes usually don’t call for cooking the meat as long as this recipe does, she just happens to like it really tender. I think the tenderness is what makes this recipe so great.
