1. Prepare smoker to 300 degrees.
2. Spatchcock the chicken.
3. Season liberally on all sides with Holy Cow seasoning.
3. Place chicken on smoker.
4. Baste with melted butter a couple of times during the cook.
5. Remove chicken when it reaches 150 degrees internal. It will continue to cook to 165 once removed from smoker.
