This is the traditional fried bread type scone common in Idaho and Utah, not the biscuit-like scones found elsewhere. This recipe is allegedly from Merritt's Restaurant in Boise, "Home of the Scones."
Mix the yeast and water together in a small bowl and put it aside to soften.
In a large mixing bowl, add oil first, then all remaining ingredients, including softened yeast. Mix well, then turn out onto floured board and roll out, taking care not to mix in too much additional flour. Cut with a water glass or biscuit cutter, then stretch the individual scones to desired size. Drop the scones into hot grease in fryer and fry until golden brown.
Serve hot with whipped honey butter and more honey to drizzle on top, or coat with cinnamon sugar.
The dough will keep in a covered bowl in the refrigerator for at least a week. Roll out only enough dough for the scones you want to fry immediately. Avoid mixing excess flour into dough.
