This veggie-packed "lasagna" looks bright and cheerful and tastes great!
Heat oven to 400F. Coat a round oven-safe dish with nonstick spray.
Heat oil in a large skillet; add onion and saute until translucent. Add zucchini and cumin, saute another 5 minutes. Add tomatoes, beans, corn, and salsa. Bring to a light boil; remove from heat. Add cilantro to taste (optional).
Place a tortilla into the dish. Top with about 1 1/2 cup of the veggie mix and sprinkle with about 1/4 cup cheese. Repeat as many time as you dish size will allow. Cover with foil and bake 20-25 minutes. Cool a little before serving.
