Fun take on Mexican pasta and can be easily made into freezer dinners.
In a bowl, combine uncooked meat, beans, chili powder, and oregano. Spoon into uncooked manicotti shells and arrange into a sprayed 9x13 baking dish.
Combine water and picante sauce. Pour over shells.
Cover and refrigerate over night or all day.
Remove from refrigerator 30 minutes before baking. Cover and bake at 350 degrees for 1 hour.
Uncover; spoon sour cream over the top and sprinke with cheese, onions, and olives.
Bake 5-10 minutes longer or until cheese is melted.
Serve with spanish rice or chips and salsa.
To make into freezer dinners, use 2-3 8x8 baking dishes and assemble as directed dividing ingredients evenly among the dishes. Cover and freeze before baking. Can also easily double the recipe to make more freezer dinners.
Remove from freezer the night before to allow to thaw.
When filling noodles, you can put the filling into a ziplock bag, snip a corner and squeeze into noodles.
