1. Add the onions and 2 tomatoes to the meat and cook 3-5 minutes more until the onion is soft. Season with salt, pepper, chili powder, and cumin. Stir the beans into the mixture and set aside.
2. Use a buttered jelly roll pan with sides. Begin with 6 tortillas, covering the entire surface and overlapping sides. Next, spread all of the ground meat and bean mixture, topped with half of the sour cream. Sprinkle with 1/3 of cheeses. Cheeses should be mixed together) Scatter 1/3 of the peppers and tomatoes over the cheeses. Repeat, using only 4 tortillas for the second layer,the remaining sour cream, 1/3 of the cheeses and 1/3 of the vegetables. Repeat using the final 4 tortillas. Press the sides of the tortillas inward all around the edges of the pan to enclose filling. Top with remaining cheeses and chopped tomatoes and peppers. Brush all exposed tortilla surfaces with butter. Bake at 350 for about 35- 40 minutes. Sprinkle with parsley just before serving, if desired. Cut into squares to serve.
The pizza may be assembled 24 hours in advance and refrigerate until ready to bake. It may be frozen for 2-3 months, thaw before baking.
