Rainbow Rice Bowls
Heat olive oil in medium to large saucepan on medium heat - add onion
Cook until just before browned add garlic
Cook another 30 seconds until fragrant - add 2 cups water, beans, and spices
Bring to boil, cover, simmer for 5-10 minutes until beans are softening
Cook chicken with various spices until thoroughly done, cool, cube.
Cook rice.
Add layer of rice to tupperware
Beans, chicken, and other ingredients in order.
Dice avocado and sprinkle with lemon/lime and salt. Ensure stored in very tight container
