Light crunchy caramel corn that takes less than 10min to make.
If not done so, pop popcorn and put inside a clean double paper bag (One badge inside the other).
Mix all items except popcorn and baking soda in a 2 quart microwave safe dish
Microwave for 1-1/2 minutes on high
Stir, microwave an additional 1-1/2 minutes
Stir, microwave for a final 1-1/2 minutes
Mix in baking soda and pour over popcorn, vigorously shake the bag to mix and put the bag in the microwave for 1 minute
Shake and microwave for 1 more minute
Shake and microwave for 30 seconds
Shake and microwave for a final 30 seconds
Spread on parchment paper to cool
You can add nuts before you pour the caramel on the popcorn or even drizzle melted chocolate after the mix has cooled if you like
