Pork Carnitas from Mikell Galloway
Cut pork into cubes (small if you will cook on skewer or larger if cooking loose on Bar B Q), turn into bowl with all other ingredients (except Cilantro). Toss well, cover and marinate in refrigerator for at least two hours but not more than two days. Remove from refrigerator 1 hour prior to grilling. Grill. Garnish with chopped Cilantro. Serve with Chipotle Mayonnaise for Dipping (recipe below)
Chipotle Mayonnaise: to half cup Mayonnaise add juice from canned Chipotles and some finely chopped Chipotles to taste.
Serve with Cilantro Lime rice.
