Suggest a better descriptionBrown chicken thighs, remove bones and shred & add to pot with olive oil. Add smashed garlic cloves and caramelize, add Mexican oregano and bay leaf. Rinse one can of black beans and corn, partially smashed. Add diced tomatoes beans and corn. Sauté for flavor. Add chicken broth, spices and sliced peppers. Simmer 25 minutes to 1 hour.
