Use any leftovers you might have - All meats should be fully cooked. Great for meals on the go or microwaved work lunches!!
Preheat oven to 375. Spray muffin sheet with baking spray.
Mix Bisqick, milk and eggs together for a base. (Put about 1 tablespoon in each muffin cup)
Top with about 1/4 cup of any fillings you wish. Chicken and Veggies, pepperoni, sausage and cheese; ground beef and veggies OR cheese; pulled pork and baked beans (haven't tried yet lol)
Top with one more tablespoon of the Bisquick mixture. Bake at 375 for 25-30 minutes.
These freeze well and put in the microwave to reheat for lunch/breakfast (I wrap mine in a damp paper towel to keep them from drying out or getting hard - reheat in microwave slowly to avoid turning into a rock.
