Delicious Lemon and Garlic Scampi with sweet langostino tails. This is my husband's favorite pasta and it's so simple to make. He loves the bite of lemon against the sweet langostino tails with a sauce that isn't as thick and heavy as an alfredo, but not as thin as a typical scampi.
1. Boil pasta in Dutch oven or large pot according to package directions for au dente. (add 1 tsp salt and 1 Tbs olive oil to water) - when pasta is done, drain and set aside.
2. In same pot you boiled the pasta in, melt butter with remaining oil on med-high heat. When all butter is melted, add in langostino tails, garlic, remaining salt, and crushed red pepper. Stir frequently until the langostino tails are cooked through.
3. Add to langostino mixture the chicken broth, lemon juice, Italian seasoning, and parsley. Simmer about 5 minutes - long enough for the dried seasonings to soften and become fragrant.
4. While simmering, make a slurry with the corn starch and water. Add slurry to langostino mixture a little at a time while stirring until the mixture has thickened just enough to imagine it sticking to the pasta when added back in, but not as thick as an alfredo sauce. Add more or less as needed until you like the consistency.
5. Add the noodles into the pot and mix thoroughly.
6. Serve in a pasta bowl with 1 Tbs grated parmesan cheese on top.
