Okay, while in the Philippians as a child, we had this dish, and I recently made it the traditional way for the family with peppers, peas, onion, garlic, potatoes, carrots and such. They liked it but said they thought it would be better "more Asian". Like you probably just did, I tilted my head like a puppy and asked what they meant. They said, sweeter, the potatoes were weird in it, etc. I immediately though of Tai food and Siam Beef. So I came up w/ this version of Mechado just for them...they LOVE it!!! I put "Mechado" in quotes, b/c it's a loose representation of the original. See my notes to go traditional with this recipe.
In a medium bowl, combine the pork cubes with the soy sauce and lime juice. Marinate for 15 min or while preparing your vegetables. In a stock pot, heat oil at medium high heat until sizzling. Add in your onion and garlic and saute until the onions begin to go opaque. Add in your pork mixture and cook until the pork turns brown, but not seared. Add in your water, tomato juice and tomato paste, and bring to a boil. Turn heat down to low, cover and let simmer for 45 min. Increase temp to medium low and add in the pea pods, corn and bamboo shoots and simmer for additional 10 minutes. Add in the peppers and cook for an additional 10-20 minutes until the veggies are soft but not mushy. Remove from heat and serve.
You can serve it over rice or noodles if you'd like to add a starch. We prefer rice with this dish. To go traditional on this dish: Remove the Pineapple, pea pods, corn or bamboo. Replace those with a large cubed potato, 3 chopped carrots, and 1 cup frozen peas.
