The base for this easy but delicious recipe was passed onto me by my mother-in-law, and I've ramped it up some. It is PERFECT for dinner parties. Everyone just goes nuts for it and it looks pretty on the plate. If you like the taste of chicken teriyaki, you'll probably love this dish.
Wrap tenderloins in bacon securing with toothpicks if necessary. Bacon should not overlap but should completely cover the meat.
If you have leftover bacon, just thank the bacon gods and fry it up with your eggs the next morning.
Place meat in a glass baking dish. In a small mixing bowl, mix all remaining ingredients together and pour over the bacon-wrapped tenderloins. Marinate in refrigerator overnight. DO NOT DRAIN.
Bake for 1 1/2 - 2 hours at 300 degrees. If the bacon isn’t browned enough for you, spoon some juice over the meat and broil for 5-10 min, or baste while cooking. Either way works depending on how much time you have to babysit the meat while baking.
Remove meat from dish and slice. Pour juices from the pan into ramekins for dipping the meat into. Enjoy!
This is almost impossible to mess up, unless you accidentally throw out the juice. This isn't the same if you can't dip the meat in the marinade before every bite! You can add 1/2 -to 1 tsp red pepper flakes to the marinade if you want to give the dish a little kick. Serving size is relative. For normal people who eat by recommended servings, 12 is about right. In my house of teenage boys, 2-3 tenderloins feeds four with a little left over to fry up in the morning with some eggs.
