Brown beef in oil until brown on all sides. Depending on how much you get, you may have to continue adding oil until all is browned. But use as little oil as possible.
As you take the beef from the skillet, put in the pot you intend to fully cook the stew in.
Add about 4-6 cups water to beef.
slow cook until just about tender. Approx. 3 hours
peel, cut carrots the size you like and as many or few as you like, add to beef pot.
When carrots are almost tender, add your white potatoes, and onions. Also the peas if using. I really like potatoes in mine, so adjust to your liking. (potatoes cook up and shrink)
Put in seasons to your taste. Some people use a packet you buy from the store for seasoning beef stew. Found in the gravy, cheese sauces, etc. I have used it and not used it other times. You can season just as well without.
When all ingredients are fully cooked. Put some corn starch in a cup and add drops of water until its a smooth paste and can be poured.
Begin pouring and STIRRING until the stew thickens. Carefully- a lttle at a time. If you didn't make enough, you can always mix more starch, but stir, pour and wait to see how thick it gets.
