Fantastic soup that the whole family will love!
Cook onion in olive oil until translucent. Add garlic, ginger and ground spices. Stir in pumpkin, sweet potato and stock and bring to the boil over high heat.
Add the rice and boil for 30 minutes or until vegetables are tender. Blend the soup with a stick blender.
Server with toasted bread.
