Suggest a better descriptionBring wine to simmer in a skillet over high heat. Add the mussels and cook, stirring frequently, until they open, about 5 minutes. Transfer them to a bowl to cool as they open. Strain the liquid into a cup and reserve 1 cup. Discard the mussels that don’t open or have broken shells. Loosen each mussel and arrange them on a baking sheet. Cover with plastic wrap and refrigerate while making the sauce. Mash 1 tbs butter with flour until it is smooth. Melt the remaining butter in a saucepan over medium heat. Add the mushrooms and cook for 4 minutes. Add the mussel liquid and bring it to a boil. Whisk in the butter and flour mixture. Whisk in the cream, lemon juice, salt and pepper and simmer until it is reduced by ?. Remove from heat and heat the broiler. Remove the mussels from the refrigerator and spoon the sauce over each one. Sprinkle with the Gruyere and place under the broiler for 3-4 minutes. Serve immediately.
