Not a fan of almonds? Feel free to omit the almonds and almond essence, or alternatively use shredded coconut instead!
1. Preheat oven to 160 o C / fan 140 o C. Use 20cm tin.
2. Measure flour, baking powder, sugar, eggs, almond essence and
melted butter into a bowl. Mix well until blended then beat for 1
minute.
3. Spread half this mixture in the prepared tin. Thickly slice the apples
and lay on top of the mixture in the tin, piling mostly towards the
centre. Roughly spoon the remaining mixture over the apples. Just
make sure that the mixture covers the centre well as it will spread out
in the oven.
4. Sprinkle with flaked almonds.
5. Bake in oven 1 1/4 - 1 1/2 hours until golden.
Best made to serve warm.
