This sauce provides a beautiful accent to poached halibut, turbot, and other flatfish.

Whisk the mustards into the basic butter sauce. Taste, season with salt and lemon juice, and whisk again. Serve, or keep warm at the back of the stove for up to 1 hour before serving. Add a few drops if the sauce becomes too thick.
Makes 1 1/4 cups.
